Gluten-Free Krumkake PDF Print E-mail

Ingredients:

3 eggs, beaten
3/4 c. sugar
1 tsp. vanilla
1/2 c. melted butter
1/4 tsp. xanthan gum
1 c. + 2 T. Authentic Foods Bette's Gormet Featherlight Rice Flour Blend (available at Fresh & Natural Foods)
 
Directions:
Beat eggs, add sugar and vanilla. Mix well. Add butter and mix. Then, add flour and xanthan gum and mix. Preheat krumkaka iron on both sides until water sprinkled on iron "dances". Cook approximately 10-15 seconds on each side and roll immediately.

Makes 3 dozen on a small iron
