Ingredients:
6 eggs beaten
Several pieces of gf bread
1 cup milk
1/2 lb. (or more if you prefer) browned seasoned pork sausage (in pieces)
1 cup of grated cheese.
Directions:
Cover bottom of an 8X8 pan with cubed gluten free bread. Add browned seasoned pork sausage (GF of course) and grated cheese. Pour egg mixture over all (six eggs, 1+ cup of milk beaten), cover, and refrigerate over night. Bake uncovered 350 degrees for 45 minutes to an hour. The best trick comes next. After we have eaten a meal, I cut and individually freeze the remainder of the servings. They heat up beautifully for a quick breakfast or supper at a later date.
*Alternative crust -- use hash browns; Use Cold but thawed hash browns (make sure they're gluten free) and pack in like a crust on the base of the pan with melted butter. Then pour ingredients on top.
